Greystone Cellars originally housed the co-operative Greystone Winery. The building was designed by Hamden McIntyre who also designed
Eshcol Winery, Far Niente Winery, and Inglenook Winery.
From 1950 to 1989, it was owned by the Christian Brothers for the production of wine and brandy.
The building is now occupied by a branch of the Culinary Institute of America with restaurants, shops, and classes open to the public.
